Demi-glace is the most wasteful food product ever invented. Why the fuck would you cook a pot full of expensive meat and then throw it away? Damn French.

It's a thing that is only ever made in fancy restaurants, for dishes that will be billed in the hundreds of euros... It's not regular French cuisine.
It's typical for burgers to take a method from 'haute cuisine' and thinks they're cooking something that is applied in every day cooking.
A normal French cook would make a sauce from the meat juices from the actual meat that he is cooking (a 'fond', a word that Americans artistically repeat to appear fancy.)

if you take the meat out early you can just reduce the stock further and eventually get demi-glace. the only thing you're really wasting is stock at that point.
