I've done basic sausagemeat and apple ones (don't fall for the sausagemeat meme, just buy 20% fat pork mince and season yourself), and the 2 i've done using pork mince were actually with shallots and port-soaked cranberries. They're nice I was just a retard this time and not only added too many cranberries but also poured in all of the port mixture as well. Made them super sweet and the bottoms too soggy. Also caused the sides to blow out a bit.

I'm going to soak the cranberries in port again but the next time i'll be putting less in, and i'll probably pat them dry before putting them in the minced pork.

The apple ones are classic and nice but when you bake it in with the meat i find it loses the vast majority of its flavour and it just gets a bit too uniform.
