I still don't know how to make good cuppa' coffee with a moka pot. I read hours about different methods, tried everything, from the amount of coffee, to grinding my own fresh coffee (tried coarse and fine ground), different extracting speeds, nothing helped. Yes but my days would be worse, and not because of the caffeine.
I don't eat breakfast because of my diet, so I substitute it with a drink to reduce hunger pangs until I'm in my eating window. I usually use coffee for this because I love the taste, but I can use water or tea as well with no repercussions. It's just personal preference. My caffeine tolerance is extremely high so I can have a doppio after dinner and still sleep just fine, and I feel no adverse effects from going days or weeks without coffee.

Drinking a Costa Rican La Minita Tarrazu from a different local roaster out of the Clever Dripper. 65g/L with 350ml, ground to a 26.5 in the JX-Pro, steeped for 2 minutes with boiling water, quick swirl, 30 second rest, and the draw down.

The grounds had a nice and sweet, nutty aroma to them that reminded me of Honey Nut Cheerios, as well as a sort of sweet and savory hoisin sauce thing that I felt was really nice.

The brew comes out smelling much closer to that first honey nut tasting note with maybe some brown sugar in there.

Taste is very nutty with less sweetness to it than the scent but still present. No hint of sourness at all and the acidity is quite low as well. Definitely a brew containing more bassy notes than high notes. Some of the savory elements are still there but they take a back seat to the honey almond taste.

Overall, it feels really well balanced and easy to drink.

Farm Info:

Ariovaldo Bonfim’s farm, Fortaleza, is located in the city of Patrocínio, Minas Gerais, in the Cerrado Mineiro growing region of Brazil. Born and raised in the state of Paraná, he and his family relocated here in 1987 seeking better climate conditions for coffee production. The relocation came with its own challenges though, proving that a lack of skilled labor and machinery resources still made farming difficult. It wasn’t until commercializing their process that they were able to increase their production levels and eventually expand their crop.

Within Cerrado there are many microregions that present unique characteristics in the cup. The Chapadão de Ferro microregion, where Ariovaldo’s farm can be found, is a small town with farms situated around the cone of a partially formed volcano. Farms here are at higher elevations above 1100 meters and coffee is harvested a month or two later than in other parts of Cerrado Mineiro.
