With lean meats the main thing you get is protein, but organ meats are incredibly nutrient-dense. So much so that it's a good idea to limit how much you eat in a given period of time. Depending on the animal, a single serving of liver can give you like 300%-600% of your daily recommended intake of certain vitamins which isn't great if you do it often.

Wild predators don't have the luxury of eating as much or as often as we do, so it's probably not an issue for them.

I guess they're also maybe not as versatile.

Their bodies just also process it differently so it doesn't end up poisoning them like it does for us.

But they probably are better if you don't eat as often or have a great diet because they're more dense in some nutrients. Since a lot of people eat meat every day they probably aren't lacking in things like iron. Once in a while I start to crave something with liver and I guess it's because I need the iron or vitamin A, but if I'm not having cravings then it just doesn't taste that good to me.

Inuits have less problems than expected on their carnivore diet since they eat every bit of the animal, they're probably genetically/microbiome adapted to their diet though. Offal is pretty good to eat once in a while, I try to eat liver once a week cause it's so nutritious. It's relatively cheap too, though I try to go for grassfed irish beef liver if I can afford it.
