I just keep cooking it until it cooks off. When the fat is almost all cooked off you can add spices and they get nice and toasty before adding liquids.

How people still don't understand this, I have no idea. "Draining the fat" is 90% just draining the fucking watery beef juice which leaks out of the beef. It doesn't change the nutritional content of the beef, but it sure changes the flavor if you make all of the beef juice leak out.
