Wtf does "essential" mean? Does it mean the most "default" dishes?

Unironically its probably just meat with potatoes and fish with potatoes. Pretty sure ever single European nation has a variant of that which they don't concider as "foreign" food. Maybe less fish for landlocked countries in the middle.

Pizza is also probably nowdays a "universal" dish. Ie, most people will say that they "ate chinese" or "ate japanese" but wouldn't concider pizza as "eating Italian", rather just a local fast food option.

drei im weggla is a very regional thing, and currywurst is pretty bad to be honest.

>I just thought it was a common way of having Bratwurst mit Brötchen. Which is a pretty national thing... right? Unless I'm wrong.

It literally means "three in a breadroll" in a regional slang, and that implies that you use "Nürnberger" (a small kind of Bratwurst), because other Bratwursts are too big, and you use only one per breadroll. Since there are a lot of types and Nürnberger aren't the most common one, I think it's more fitting to use the term which covers all sorts of Bratwurst.

>Haven't heard of it, looks interesting.
It's an old prussian recipe, so it doesn't have a lot of modern influence. The combination of minced meat and a white sauce is fairly uncommon in the German cuisine, apart from this dish.

>I thought it was really good when I had it in Berlin.

Well, everybody has a different taste, but I think it's nothing special and most of the time the sauce is just like even sweeter than usual ketchup with curry powder.
