If you've made it this far without getting e. coli from veggies (aka the most common source of food poisoning), don't worry about salmonella. Also, try something like a burger or lemon chicken that has plenty of plants in it to ease yourself into the flavor. Cajun dishes are also an EXCELLENT transition into shellfish

Last time I touched on this topic it became a wall of text, so I'll tl;dr it here (assuming you live in the US): heavily ingrained taboos that drive hygiene standards dictated by demands. You can get chicken sashimi in Japan, but only because there's no taboo against it which creates enough of a demand to justify the extra expenses of keeping your poultry clean enough to consume raw safely.
Ground meat has its uses.

If you're not a poorfag and want the best of the best, get d'artagnan meats. Their chicken breasts have more flavor than most brands' chicken thighs, with a tenderness you can cut with a fork.

I estimate a 92% probabiltity that this is bait. Nontheless this is my suggestion. Buy the following:
1 rib eye steak
1 pound of ground beef
1 porkchop
1/2 pound of bacon
1 chicken thigh

Give them some basic seasoning (apart from the bacon). Salt and pepper for the beef, maybe salt and some herb, say rosemary, for the porkchop. Maybe some garlic powder for the chicken. Cook them all for the recommended internal temperature. Shoot for medium on the steak, otherwise you'll know it's done by the coloration. This will give you a basic feel for the different types of meat, the tastes and the textures.

Gravy beef, chop it up into inch thick chunks, and pan-fry it till every side is brown. Then add two cups of beef stock, whatever spices would go well with a dish of your choosing, such as spices suited to a curry, or those for a casserole of your choosing, and let it simmer for two hours, with onions, carrots, potato, whatever veggies you'd like.

Gravy beef is a cheap cut of meat that needs to be cooked low and slow to keep it from being tough as shit, so this way you can use a cheaper cut of meat without fear of fucking it up, because letting it simmer in spices for a couple of hours will mean it will be soft, tender, and most importantly for you, definitely cooked. And since slow cooking like this is a versatile method of cooking you can make whatever you'd like. Stews, soups, and as I said curry.

For a nice curry use some cumin, ground coriander, garam masala, tumeric, paprika, and as much white pepper and cayenne as you need to get it as spicy as you would like. Add your veggies and add some chickpeas, and let it cook. Near the end throw in some cashews as well, can't go wrong.

Or you can always just brown some mince and make lotsa spaghetti.
