I've been into making my own burritos and fajitas lately. Works really well cause you can just add more beans/guac/salsa/peppers or whatever you like. I don't feel like tortas lend themselves as well to be vegan for some reason.

I try to keep track of everything on cronometer, just to make sure I get everything I need. If I miss a couple nutrients one day, I try and eat more of them another day.

Most mock meats don't cut it for me so I just do stuff like falafel instead. Especially the faux bacon and sausages are not to my taste, while stuff like mock ground beef can be good from the right brand

Lately I have been making tacos. It's relatively quick to make and tasty.
The meat is walnut based. Sometimes I use tempeh, but walnuts is really quick.
You pulse them into a crumbly mixture in a blender. Then mix on soy sauce, garlic, salt, pepper, and generic taco seasoning. Then you fry some cumin seeds in oil for a minute and cook it up until browned. Then I get cilantro, onion, limes ,tomato's, and cabbage cut up for the topping. And toast up some corn tortillas.

I use mock meats. Switch around a lot. Tofu, seitan, tempeh, and sometimes normies tier chicken stuff. I tend to stay away from beyond meat etc it's a lot.
