Gonna make this tonight, but the sauce always falls kinda flat to me. Any suggestions on how to make it better and taste more similar to Panda Express? Was thinking of adding a splash of rice wine vinegar and some garlic.

If it's anything like the teriyaki chicken sauce it can probably stand to be a bit thicker. Warm it up in a saucepan and add a little cornstarch slurry if that's the case. The you can add more vinegar or whatever else you think it needs.

my favorite frozen meal from this store.
msg is a good suggestion, maybe some 7spice/togarashi/shichimi.
saute half a chopped onion and maybe some peppers before adding chicken.

rice wine vinegar and garlic are great additions

also throw in some fresh cut ginger as well as 1/4 cup of orange juice (Fresh) and a teaspoon of orange zest.
