Cuz my pie's so fly, it's got style, I can't lie. There's a stye up in my eye cuz I always cry about my pie. Yes this pie will truly defy all the senses on which you rely, and go straight to the thighs of any girl or guy from here to Shanghai. The crust, my oh my, yeah the flour fortified, ain't no rye, but I swear it will blow yo goddamn mind. For inside, lime is key, supplied slyly with condensed milk and heavy cream. Now reach up to the sky, pray to any god you deify, and thank them for this fine pie that now occupies your mind.

Do you have any recommendations for the easiest pies to bake? I'm wary on apple. My dad doesn't have a favorite and I'm a little tired of peeling skin. For the top, it has to be lattice. I would even do one of the weird crusts like in OP's pic, but I'm so bad at what I already do.

My main issue has to be the crust. I'm so bad with it, but I don't want to practice it a bunch or bite the bullet and make it look like shit. I'm so tempted to go to the store and just buy one, but my dad deserves a handmade crust. Pumpkin is so super easy. And rhubarb pie is also incredibly easy. If you don’t want to peel your own fruit look for ones like strawberry or prepeeled frozen fruits, and thaw them before making filling. My go to pies are pumpkin, pear, and rhubarb. They’re always a hit!! And why not apples you may ask. Where I live a lot of pears grow and they are tart which goes better in the pie for my personal taste. Use a potato peeler to make peeling your fruit easier. I know a lot of people peel with knives but I’m impatient and don’t!
For your crust... keep it cold, but not so cold that it’s very stiff, lest it may crack or tear when you are working it on your pan. There is nothing shameful for premade crust but I know EXACTLY how you feel about making it from scratch. It’s totally worth it!!
Go right ahead and bite the bullet. Oh, and I have some hand problems that make it hard for me to use them well, so I bought this cool tool at the grocery store. But actually, even if you have good hands, it will work AMAZING!! It’s a pastry cutter? Mixer? Don’t know what to call it. It’s heaven sent for pie crust making!!!
And, when before you put your pie in the oven, what you should do as a secret is take a little brush either rubber soft brush for brushing sauce, or a soft brush like a paintbrush you don’t paint with, and paint your crust with milk. Trust me. It will make your crust so pretty and golden and buttery sheen. It’s great!!!
Also: IMPORTANT VERY IMPORTANT TIP! Before you put ANY filling in your crust, line the pie pan with your crust as usual right? But!! You need to line it GENTLY with parchment or foil, and then fill the lining with a weight like dry beans or rice. If you don’t parcook your crust it will probably be raw on the bottom of your finished product. And the weights keep the crust from getting bubbles on the bottom. Please do this! You just pop it in the oven at the temperature your pie cooks at (usually 425,) and you set that

Baking can definitely be intimidating f for sure. And pastry dough which is notorious for being finnicky is a bit daunting isn’t it? But actually, you just need to give it a shot and give it all that you got. Baking is something that is very hard to mess up if you follow recipe and instructions to a T! Follow the recipe for its word as a beginner, and you’ll get the hang of it in no time. Baking is so much fun and I honestly think you will make an amazing pie for your dad. It’s okay to be intimidated but don’t let that stop you. If you don’t wanna go pedal to the metal just yet, try a little bitty pie? Divide the entire recipe to make a tiny batch of dough and make little tiny ramekin pies. Sometimes i do this for fun with dough scraps. It would be a great way for you to practice. But I think you can do it just going all in and making a whole pie crust. You are really so capable and I know it will be a delicious pie with a flaky, buttery crust that comes out golden and delicious. I use KA flour... NOT sure if it is placebo but I like the result it yields. But regular flours are also fine!
2.5 cups all purpose flour
1tsp Salt
6 tbsp Butter (VERY COLD!!) (Cubed)
3/4 cup shortening (ALSO SUPER COLD)
1/2 cup ice water (don’t add the ice in, just use to keep the water super cold)
A little vodka or other clear alcohol

Mix your flour and salt in the bowl. Then add your fats, cut your fats in with a pastry cutter or other mixing tool. A pastry cutter is GREAT! If you don’t have one try using two big forks!
Once mixed it should be coarse. Some pea sized little bits of dough with larger bits of fat are okay. But keep it ground and coarse!
However much water you use can depend on the season. But just add 1 tbsp at a time until it forms big clumps. Continue mixing your water in! With your pastry cutter or forks.
If your dough still is not workable after so much water, add tiny splash of vodka to make it workable. Trust me!!!
Bring dough to a floured work surface. Your dough shouldn’t be overly sticky. Keep folding the dough together until it’s a ball. Split the ball into two and then. flatten them into two one-inch thick disks.
Wrap them tightly in cling film and refrigerate for at least 2 hours. They can stay in the fridge up for five days before using!
Then when you’re ready, roll your dough out gently starting from the center. Dont be too rough! Speckles of fats or spots of fat are perfectly okay and normal. Don’t fret!! Once it’s rolled out evenly, proceed with making the pie. I HOPE I HELPED!! BEST OF LUCK!!!!
