What a joke. Italian cuisine is literally supposed to be "peasant food", i.e., do what you can with whatever little you have. The whole point is the delicious things you create while having very little to work with. The other aspect is how everyone's "mamma" makes the recipes different so no two bolognese, no two lasagne (etc) are the same.
So when an Italian chef acts snooty and claims "that's not the proper way to make X!!!" you just know he's a hack trying to emulate French chefs. French cuisine can act elitist because it's aristocratic in its roots and based on a ton of arbitrary rules (etiquette). Italian cuisine cannot do this because it's meant to be the most basic and accessible type of cooking.

At this point none of us is either right or wrong, we just draw the line at different prices. Tomato base sauce is not only cheapER than pesto, it's just cheap. The only thing less expensive than tomato sauce to put on pasta is (quite ironically) olive oil.

Lard is absolutely the national fat in Italy, from north's piadina to south's 'nduja. Still I guess to me olive oil is an "essential" ingredient that i use in many ways almost on a daily basis, so i dont really mind the price too much because i would buy it anyway.

Also to me evo is cheap because rather than comparing it to other fats like lard i compare it to.. well different versions of itself. Olive oil being an essential good to me stands in its own category.
