Firstly it would be the processing that it went through. This is irrespective of the ingredients. The bun, for example, is quick risen using a vegetable oil to speed up the process. Parts of the wheat are extracted with some kind of process but then re-added to help the rising. Sugar is also added to the bun and to the sauce.

The sauce contains more vegetable oil and also more preservatives. The preservatives are often derived from natural sources, but the process is the same way as various drugs are derived from natural sources - some kind of chemical/industrial process. They are often exposed to high heat, dried with industrial driers, etc. So their structural integrity is different to when they are part of the natural source they were derived from.

The meat is usually at most 86% actual meat, the rest is fat that is high in omega 6, saturated fat, whatever. There is also a lot of salt added. Often your entire day's intake.

I am only speculating about all of these things. I once ate only burgers for a year and it definitely wasn't healthy. This may have been due to a lack of other vitamins and minerals, who knows.

I worked for a place that was trying to spread out and franchise. they did their own burgers, got the buns from the bakery next door to HQ (and eventually licensed out the recipe), used good cheese. $12 burgers, but they were good... anyway, because trained staff were spread thin trying to open two new restaurants every two months, I wound up working 16h days, 6 days a week, so I ate burgers for two meals, six days a week, for 6 months, and lost 30 lbs.
