I've never made risotto before and kind of wanted to try. Every recipe/guide/etc online says it takes like twenty minutes to cook risotto, which isn't that big a deal. My question, though, I've watched Hell's Kitchen, and if a chef fucks up a risotto, they can refire a new one in like six minutes. How are they or Ramsay able to cut down the time it apparently takes to cook risotto by more than two thirds? I know a lot of stuff gets prepped ahead of time to save time, but can you prep risotto ahead of time like that?
