The fish isn't actually processed at all, aside from the cleaning/portioning. I used to work in the blast freezers in Alaska where all the Filet-o-Fish are processed. The fish come in and are turned into those little squares in under a minute, coated in that breading, and immediately frozen. They go from whole fresh fish to frozen squares in less than 20 minutes.
