I don't regular this board but I'm hoping someone can help me. When I get salsa from the store it's too sweet for some reason, so I'm going to make my own for chips and salsa. What is a good recipe?

I swear by this shit, best salsa I've ever had. They use jalapenos as a base so its pretty hot but its great. I'm also a fan of Newman's Own pineapple salsa, but if you're looking for something less sweet that would be the wrong direction

Ingredients
▢ 1 pound Roma tomatoes (about 6 medium-large tomatoes)
▢ 1/2 medium white onion
▢ 1 jalapeño pepper, stem removed
▢ 2 teaspoons minced garlic
▢ 1 cup cilantro sprigs, packed
▢ 1 lime, juiced (about 2-3 tablespoons)
▢ salt, to taste

Instructions
Add all ingredients to a blender or food processor. Pulse until salsa is blended to your liking - chunky, a little chunky or smooth.
Taste and season with more salt, if necessary.
Serve immediately or refrigerate until ready to serve.

Renfro's makes the best salsa in general. I lean towards the habanero salsa but it's hard to go wrong. The ghost pepper sala was the best I've ever tasted but it's a little too hot for me now. Sadly their cheese dips taste like shit.

There is no good store bought salsa. All attempts to say otherwise are lies. Making salsa is extremely easy. Even if you take the shortcut of buying canned tomatoes, you will end up with far superior salsa if you make it yourself.

all good replies. start with a simple recipe and just tweak it as you go. i don't bother roasting, but i like extra garlic and extra blended because the flavors are more evenly distributed for my autism. if i don't have peppers i use any hot sauce i can find and it still comes out great.

i like pico de gallo in place of any salsa, which is easy to make

Import Herdez brand is never sweet. I think Pace is also acceptably not too sweet. Rotel Festival is quite hot, but can be kicked up a notch in flavor. Stay away from Newman's Own.
To fix/doctor up a canned salsa, add a generous squeeze of fresh lime juice to let the acid balance that sweetness and fresh cilantro for fresh flavors in pasteurized salsas. Cilatro is sold in a paste that is convenient for people who have it spoil too quickly by the bunch.

Basic "pico de gallo" is simple.
I put some chopped white onion and cilantro in a mini processor, pulse twice, then add chopped fresh ripe tomato (from plum to tasti-lee to campari, whatever is the most flavorful that day), pulse quickly til chunks combine (not too much!)
Transfer to bowl, stir in salt, pepper, and lots of fresh lime juice to taste. Finish with finely minced jalapeno/serrano (optional) til desired hotness reached

There are many other salsa recipes, but most others require pre-charring your onions, peppers, tomatillos and other additions, so they can be peeled but also to add flavor. Most will also use your blender.

Queso dip is pretty easy if you can do a bechamel because chorizo is entirely preseasoned with the mexican flavors. Buy some chorizo, dried or fresh, brown your diced cured meat or crumbles of fresh chorizo in a small nonstick, turn the bright red rich drippings into a roux, incorporate your milk and cheeses. Again, add serrano or dried chili flakes until desired hotness level reached.

I usually just get Pace Medium or Hot Sauce (NOT CHUNKY SALSA!!!) but lately it's like they forgot to use the blender so I have entire quarters of a bell pepper in there and it's the same as chunky salsa, so I am forced to put it in the blender myself which always makes me end up adding some lime juice and more salt and cumin, then I have trouble getting it back into the jar because it's a weird shape and I hate all of this
