Oh, and they overcook meat too. I think that most of Portuguese cuisine originates from poverty. Nobody had good ingredients, so you developed recipes that didn't need it. They make a lot of soups, they roast things in the oven for long periods of time, they cover it with rich sauces. I made some tri-tip one time, and they thought it was the greatest thing ever. Several months go by, and they said they had a surprise, and they made tri-tip for me. They had put it in the oven for 3 hours like it was a shoulder roast. I've had ground beef that was labeled 80/20 but it must've been more like 60/40 because it produced way more fat. It was amazing for the stew type dishes I made with it and all the fat made it taste really good. But for burgers it just shrank too much and there was too much fat leftover to really do anything with. I actually like leaner beef for burgers, like 85/15 or even 90/10, cooked until nicely browned and then topped with lots of cheese for the fat and maybe butter the bun. Over easy egg can be a nice burger topping too for the fat.

Fries can be alright depending on the serving size. But the large serving that ends up giving you more calories than the burger itself on top of usually being smothered in ketchup isn't good. For example a double burger from McDonald's is 400 calories but a large fry is 510 and then you get even more from the ketchup.

Seemed like historically if you didn't die from warfare or childhood disease you'd live to at least 60 while regularly consuming animal fat, but now with more processed food in our diets we have diabetic kids and people dropping dead at 40. Cultures that still mainly rely on meat and milk for most of their calories seem to be doing better than we are on average.

Unprocessed food is a lot harder to overeat. It's more nutritious which makes it more satiating and that makes it easier to stop eating when you've had enough. Processed food has been scientifically designed to not only taste good but also have textures that make them easy to eat without being too filling so you'll keep going back for more and more past the point of meeting your calorie needs. And it takes more than just a full stomach to actually feel satisfied and want to stop eating, since processed food usually doesn't have more than pure calories it causes overeating more too.

I think you really underestimate the harm that processed food is causing. Every time we see a culture move away from their traditional diet that includes more meat and fat to modern processed foods, they get sicker whereas before they had almost no diet related health problems. Blaming basic foods that have been in the human diet for millions of years like meat and animal fat probably isn't going to help anyone. The widespread claims about animal products being unhealthy literally only started when companies began producing processed plant-based alternatives or wanting you to buy more sugar. It's really frustrating that lard and butter were said to be unhealthy and that you should eat vegetable shortening instead and vegetable shortening killed so many people, but they still believe lard and butter are the problem. Even some studies that say butter has health problems say that it's only for people who already have heart disease for other reasons but it's fine for the average person.
