I always make a broth from chicken thighs and wings, pull them out to fry them on the pan later and use this rich and fat broth to make soups. Nothing better than a tomato or veggie soup with sour cream, based on this fat and rich chicken broth.

Nice. Don't really see many people do that here in USA but I like it too. Freshly cooked chicken is nice but shredded chicken fried with some butter is really good, especially since it's easier to get the skin really crispy this way.

Soups and stews are great but for some reason I'm usually opposed to eating them during summertime. Maybe it's because they stay hot for so long, and each bite just stays warm going down and making me feel warmer overall. Not a pleasant feeling when it's 90+ outside. Also cold soup is gross.

Homemade doesn't necessarily mean it was done properly and the fault is the dish itself. A good meat broth should be really flavorful and have a pleasant texture from the gelatin in it. If you use too much water or don't simmer long enough to extract that stuff then it's going to be thin and bland. A good soup is really nourishing since it can extract a lot of nutrition and is easy to digest, and can make you feel good after eating it.

Soup is basically half water, even the more reduced/thicker ones (such as split pea). This might be good for someone who never drinks water, but someone who hydrates well will be OVER-HYDRATED by supposedly "tasty" soup. That taste btw is JUST salt, because you have to add so much to account for the water. You're diluting the flavor of EVERY component. You would do better to just eat ox-tail and vegetables. Soup literally only adds (unneeded) water and a LOT of sodium for LESS taste.

You know when I said that I meant visible water. Meat is 75% water, but that's only abstract water.

Because without a crazy amount of salt, it doesn't taste good. The problem is a crazy amount of salt brings it up to something only detectably salted BECAUSE of the extra water. You need to use twice the salt to get it to "salty" tasting. Can you see why this is bad?

Shorbat adas or mercimek are easy and tasty. If you can sweat some vegetables, toast powdered spices for a few seconds, pour in water and lentils then wait for 20 minutes or more you can certainly do those.

A good hearty vegetable soup is amazing. I usually start with leeks, then add celery, carrot, potatoes (now or beans later), mushrooms. Zucchini, peppers, green beans, peas are all fine as well.

If you like Olive Garden, their zuppa clone is stupid easy to find online. It uses sausages and onions and potatoes and kale simmered in stock and then finished with milk or cream.
