Having worked with Chef for all but two seasons of Hell’s Kitchen, I can honestly tell you that the man was actually one of the nicest guys I've ever worked with. And before the accusations of being a butt kisser worried for my job, I'll point out that I'm no longer working on the show or in reality television.

As I came on during the second season, I went in with the expectations of the man being a screaming jerk and planned to get out of there if he ever decided to point that rage at me. I was in the lunch area on break when he arrived on set and was passing behind me when he stopped, put his hand out to shake mine and said “Welcome to the show, Big Boy!”.

For the next however many seasons I worked on Hell’s Kitchen, he always said hello and thanked me for coming back to the show, shaking my hand and calling me Big Boy on the first day of production.

Being nearly 300 pounds, I initially thought he was being a bit of a smart ass, but there was always a friendly smile and I immediately realized that that was his style of humor. So I embraced it. And lest anyone think it was because he couldn't be bothered to learn my name: during the 2nd season wrap party, he met my wife and took a picture with her and every season after that, when he welcomed me back to the show, he always asked how she was doing, remembering her name, the fact that she was a veterinarian and that we had our own vet clinic. It always impressed the Hell out of me because it was not only a very classy move, but the fact that he could remember that about a crewmember’s wife, that he met only that one time, and that well over 300 people worked on HK alone (while simultaneously shooting two to three other shows around town with different crews) always made me realize why he's as successful as he is.

But that is why I was super loyal to the show and would turn down other (sometimes better paying) jobs to go back to work for him.
