I think I will say Cornish pasties.
I usually find the first recipe on google and replace swedes by carrots because they're annoying to find.
I also make a coulibiac-like version with salmon, rice and tomatoes

Ethiopian sambusas. Dough is lighter and crispier. They are smaller. The fillings are pretty interesting in their own right. As for samosas, the potato kind is my favorite.

these are filled with a sweet almond filling rather than meat, and I'm posting them because they were the prettiest dumpling-ish thing I've ever made.
but my actual favorites to make is chinese jiaozi, with a pork or beef stirred until they get kind of bouncy and then mixed with steeped ginger and sichuan peppercorns, scallion, soy sauce, chopped up vegetable of choice (usually zucchini or green beans or cabbage or carrots, whatever I have). the dough is just 3 cups all purpose flour a bit of salt and 1 cup of water (roughly, varying). you can boil them, fry them, or steam them, all are good
