If you want subpar pasta in interesting shapes buy. If you want the best possible pasta get a hand roller machine instead.

This is a true brainlet. Traditional method is make a well and crack a SINGLE egg in. These machines are pretty good, but make sure you do your research. Avoid plastic parts when possible as a general rule.

just learn to make noodle dough the old fashion way and use one of these. You learn a nice skill to show off to people and maybe one day should a solar flare send us all back a hundred years before electronics, you can still make pasta for yourself and friends

Wouldn't the dough be sort of.. wet/sticky when coming out of the machine? Is that not the reason people kind of "dust" their fresh pasta strings in flour so they don't stick together?
When I make gyoza and don't put some flour between the wrappers they'll definitely stick together.
