Making curry is insanely easy. You can get all the ingredients from your local wal mart. Cook your protein of choice until it’s cooked through and then add your curry sauce of choice and simmer for 15 minutes. I buy frozen peas and carrots and thaw beforehand. Then I throw in the chicken pan with the curry sauce. Takes 30 to 49 minutes at most and costs around $10

This looks... unlike the curry you'd get at an Indian restaurant. I understand that Goan curry is a different thing that's heavy on the vinegar, but if OP is North American or British that recipe is going to be very different from what he gets at his local Indian restaurant.

One recommendation for OP: If you decide to make this and you like it extra spicy as you say, increase the heat with hot chili powder (lal mirch) rather than adding additional fresh peppers.

I like butter chicken as it is quick and easy enough for an instant pot. The hardest part is doing the spice calculus. I make keema matar a lot and have started exploring using different meats and veg. Fav so far is adding ground sausage to the mince, large diced carrots, and Yukon gold potatoes. Mountain of cilantro on everything.

Op here, I grew up in louisiana, so I have somewhat of a tolerance for spicy stuff. The first time I had vindaloo I got it as spicy as possible, and I had trouble eating it. Now I can go through an entire plate no problem. My poops aren’t even that bad to be honest. I guess I just have experience lol
