Apparently it's a big enough issue that's costing the industry $1B/year as they have to sort the birds and divert the woody-breasted ones to supply chains bound for ground chicken producst like nuggies. They can detect it's development in chicks as early as 1 week old, so it's mostly a genetic thing.

It's just biochemistry. Fishy smell on sea fish is owed to a specific amino acid which breaks down into a smelly component called trimethylamine after the fish is dead. That's why you cut fish on its own cutting board, because surfaces that handle fish are tainted with the smell of trimethylamine.

They're slowly making all commercial meat more expensive and lower quality to ease the public into the transition to fake meat which has a much higher profit margin. Mark my words, 90% of the facebook boomers who stomp and yell about "I won't let them take my meat away!" Will willingly and quietly desist from eating meat in the next ten years because real meat will taste like shit and have garbage texture while the fake soy food will texturally uniform and flavored like cocainebeefcheese or something. Then the only people who will get to enjoy real meat will be farmers and the uber rich until meat is outright banned for being "cruel" for everyone who makes under 1mil a year.

Evolution at work. Some chick randomly mutated into cheating the breast muscule size by overfilling it with water. That protein can be repurposed for things that actually need it or be not made in the first place to let the body rest from the constant grow grow growth. So it spread like wildfire because the farmer gets the same sized chicken, but healthier and who gives a shit that the meat is worse.
Imagine how many other mutations like this happened but the decline in quality wasn't enough for people to notice, so it became the new, worse, quality. Chickens out of all livestock have the highest evolutionary pressure because they live so short and there's so many of them.
