And rightfully too, it was always retarded. If you wish to cut a curve you need a perfectly straight edge. Pick any three points on the edge of that concave blade and they will define a plane, and the blade will alway try to stay in that plane and resist cutting in a curve. A curved blade does NOT want to cut in a curve.

Stick a fork with two or three tines into a wheel of cheese and try to twist or turn the fork, it wont work. Now stick an icepick into the cheese and you can twist or turn it very easily.

Concave = curved inwards, the opposite of convex = curved outwards. If I press my convex beer gut into a pile of sand it will leave a concave dent in the sand.

As for the (geometrical) plane: another example would be a normal door. You can have as many hinges as you want on your door and it will work fine, but the axes of the hinges all have to be aligned so the door can move freely. If one of the hinges is not aligned with the others the door will not open, or the hinge will get ripped off.

It is the same with that concave shaped blade - if you cut into something and try to cut a curve the tip and the heel of the blade will work like two hinges, and any point between them will form another hinge, but one that is not aligned with the tip and heel "hinge". The only way you can twist the blade left or right is by using force and thus deforming or ripping the produce apart.
