i used to work at a restaurant that had a "meatloaf of the day' on the menu. so i ended up making a different meatloaf almost every day. they were not all totally unique but chef wanted repeats to be infrequent. so basically a new meatloaf variation every other day.

it was a pretty fun daily duty.

Do you put bread crumbs in your meatloaf anons? We used to do crushed oyster crackers or crushed Ritz crackers in ours growing up. I don't put them in now but I'm not a great cook and I notice when trying to make cold slices for leftover sandwiches it doesn't really stay together. It's good for stretching out meat by using them though.

I'm not a great cook but here is what I do, maybe it'll give a basic guideline. I make them big so I'll just list ingredients instead of actual measurements so you can make any size you want.

Meat mix:
~2/3 Beef, something non lean but not as greasy as 80/20
~1/3 ground pork or ground sausage
--A couple strips of bacon, chopped

Fillers/Flavors:
--Egg(s) for binding
--Vidalia onion, chopped fine
--Dijon mustard
--Worcestershire
--Parsley
--Cumin
--Fennel seed
--Some of whatever sauce you are putting on top

Top sauce:
--Ketchup mixed with worcestershire
Or
--BBQ sauce
Or
--Chili Sauce and a little brown sugar

Optional items:
--Diced bell pepper
--Cajun seasoning
--Venison instead of the beef (but compensate with a higher ratio of pork)
--Green onion

What my family always called "meatloaf" is nothing like whatever meatloafs I've ever seen online. I've never had baked meatloaf, nor met anybody who had a similar recipe to us, yet my entire family cooks it the same way. It's more like a kind of meat christmas pudding

>minced beef, generally quite lean
>bacon (usyually home smoked bacon which is more likea mix between proscuttio and salt pork, extremely smoky flavour
>a lot of garlic
>pepper, salt in generally unneeded due to the salt in the bacon
>shredded bread
>worcestershire sauce

pack it into a pudding basin, seal the top and steam in pot of water with the water riding 1/3 up the base of the pudding basin. It's delicous and excellent cold in sandwiches. I have no idea if anybody else on the planet eats this, but curious.

>> No.17314576

>>17314556
That's probably the closest description to it, yet I feel that calling it "meat pudding" desparages it slightly. It contains roughly the same ingredients as a meatloaf, yet is steamed instead of baked and retains delicious moisture. I remember seeing complaints about meatloaf as a kid from american TV shows and the dryness always seemed to be a major complaint

>> No.17314591

>>17314576
I've never had a dry meatloaf but I imagine if it is then it's probably been baked too long or way to many breadcrumbs. Of course, television is usually a garbage exaggeration of things. You're familie's recipie does sound interesting though, I might give it a try just for the experience if I can find something like that smoked bacon.

This is what the bacon my family make looks like, vacuum packed and frozen ofc. left is cured wet for 4-5 days before smoking (belly) and that's for frying like normal, right is hung dry for 6-8 weeks (leg and shoulder) before smoking, and used for either cooking (in this recipe) or sliced thin and eaten

sorry for garbage picture
