also if you are making stock or braising something crushed peeled cloves are only going to make a tiny difference in flavor and be a lot harder to fish out the liquid

it's kind of like this, the handles are made of cheap plastic and it's hard to get a grip. There's also no big movable metal thing that presses on the garlic between the handles, it's just a grate with a solid piece of metal attaches to the top part. Maybe a better one would work better but I suspect it's mostly my weakness that causes the problem. The garlic doesn't even go out of the holes, it just gets a little squished.

It's meant to help fish it out, it is to enhance the flavor but it turns to mush and isn't very tasty on its own

They also do shit like chop a yellow onion in half and leave the skin on

They remove it and add a different set of vegetables that they may have browned and set aside to maintain the right firmness

Just so you can fish it out easily. It's for stews essentially, where after cooking you want to remove the now boiled out vegetables and the herbs, but sieving doesn't work since the meat would be caught too. You try to cut your vegetables such that they are easy to retrieve (e.g. also leaving the root of the onion intact, tying your herbs together, etc.).

Then, to serve, you cook up some fresh vegetables that are as you want them, along with some garnish (e.g. lardons).

It's not something you do if you intend to eat the garlic, or e.g. have it distributed over something.

Flavour wise you get a slightly more mellow taste, where you want a sweet but not particularly intense garlic taste.
