It ekes a lot out of a handful of primary ingredients with a handful of spices (much like Italian) and some occasional extras that nobody thinks about when they think "Mexican" (or Italian). Like any food, it can be stripped down to basics (soups, stews, roasts, grain/bread+_, salads, and outliers), made for quick meals, or it can be made fancy/expensive.

It's got a lotta sloppa, but so does everyone else.

Only if you talk cliche basic Mexican food. There's a lot to like if you go beyond tacos and tortas. That being said I agree it's overhyped and that there's a lot to like I'm other parts of the world as well. Personally as a Mexican I love US grill culture, their Barbecues have a very attractive look and I can imagine the flavors. Also want to learn more about what Europeans eat. Latino food is good but kinda overly saturated in stuff (gets even more stuffed the lower you go on the continent).
