The reason people say this is that Tabasco uses a fermented red pepper mash, which is sour on it's own. This combined with it's vinegar base causes tastelets who can't differentiate the vinegar from the mash to complain that it's all vinegar.

I always tasted a good amount of pepper in Tabasco. The main thing I like about it is the fermented flavor is pretty unique, I can't think of any other fermented hot sauces. It works really well on fatty food that benefits from the vinegar, but it's more like an ingredient used to complement a dish rather than a flavorful sauce to slather on everything.

No they're not. Most of them are just blended and bottled. Unless you're counting the vinegar as an ingredient which is fermented, but that's not the same thing as Tabasco fermenting their peppers in a barrel for a few years. If you have proof that says I'm wrong I'll take a look at it though.

Local monks near my town make this, it's one of the better sauces I've had. Nothing terribly special to the recipe, but its fresh and quite a bit thicker than most sauces

They don't taste fermented much to me like Tabasco does though so I'm guessing they don't do it as long. I like the flavor from a long fermentation and wished more food products would use it.
