Not a big fan of them in cooked food. I just don't think they add much.
Absolutely love them as topping/garnish on openfaced sangewedges and in salads, though. They are mandatory with eggs on bread and also pair very well with fish such as gravlax or pickled herring.

Love the bagels and lox as well, but I think you can get by with just the smoked salmon and capers. Sure, a great tomato (get spendy or grow your own) and a red onion really do bring it to another level, but so does a fresh baked bagel and wild caught salmon that your fishing buddy brought over. Better? Yes. Thrown off? Nah. Capers are a must for that strong oily fish, otherwise the rest is delightful but non-essential.
