Seriously though, do you remove some of the cheese from the top before you eat it? That's an absurd amount of cheese by itself, let alone as a garnish for actual meal; I honestly don't think I could finish it all, especially with the cheese.

No, but there is a certain way of eating it. You don't twirl it like normal spaghetti. You turn the dish longways and eat it by cutting sections and scooping them up with your fork, eating it with relatively unmixed layers of spaghetti, chili, probably onions but please no beans, and cool unmelted cheese. The cheese is a texture thing. It's great.

It sort of melts over it too. It's pretty airy and less cheese then you'd think. Though, it is also a lot of cheese.
You can ask for less though the boss move is throwing the hot sauce on it before the cheese melts and let the hot sauce melt into it.
While you wait for it to melt, enjoy the free oyster crackers. Then go to King's Island and ride a bunch of roller coasters.

The cheese mountain is for presentation. You don't necessarily get that much in practice at restaurants. In any case, it's also pretty common to stir some of it into the pasta and chili, and even if you have too much cheese to melt by that method, you can eat it with half of the cheese melted and half not. Cincinnati chili never masqueraded as haute cuisine, so if you're the type to spit venom at "flyovers" and wax poetic about your latest culinary discoveries in Monaco, it's just never going to be your thing.
