The local italian joint here is a scratch cuisine, the food is delicious (not just the pasta), and it's not more expensive than a shitty chain because their menu is focused. I don't often do because the place is only dine-in, but yeah, I do buy pasta for "restaurant prices"

i'm in east europe, worked for a week as a dishwasher in a shitty italian restaurant owned by an italian expat, exactly the sort of place where you pay restaurant prices for shitty local pasta. they kept pushing me to "work harder and faster" while the dishes kept piling up near the tiny shitty sink in the corner with a perpetually limited amount of dish soap. the kitchen itself was extremely small, under-equipped as all the money seemingly went to the decor where the peasants eat. i left, they underpaid me, then some time later i became buddies with a group of local leftie communists who would protest against unfair capitalist employers. a lot of them had the same experience working in the same restaurant. one of them started harassing the shitalian owner, then got apprehended by some hired thug to keep things quiet. years later, now the business is thriving in the "country", with multiple spots across our blessed land and some of the best reviews of any restaurant chain.

no, i would not pay restaurant prices for pasta.

I was blown away with how cheap the food was in Rome. A top tier pasta dish was 9-10 euros tops. I think the price of Italian food in other countries is inflated due to hype.

Expat in Taiwan here, don't ever go to a pasta restaurant in Taiwan. They pretend it's "fancy foreign food" and charge twelve bucks a plate. A typical lunch or dinner here starts at $2.50 and you have to go pretty far upscale to break $8.

The local Italian joint makes really good lasagnes and tagliatelle dishes, but they do everything from scratch, and don't charge much for pasta. Their bread and butter's stuff like ossobuco and langoustine risotto.

Things with high surface area to volume ratios work best - they cool slightly faster/release heat to thicken the sauce more readily. Angel hair's a little too delicate, but something like conchiglioni's a bit coarse for what's essentially bacon and cheese custard.
