OP real reply here. How many times have you made homemade pasta sauce before? Are you sure you are doing it right? I have made pasta sauce homemade only a handful of times and I'd say out of 5 times I only got it right twice. Perhaps you got unlucky. Keep making dishes to improve upon them. Hard part is having taste testers and outside critics because you may have been practicing imperfect technique. It's practice makes permanent, always.

If you used canned tomatoes they can be acidic. Try making your sauce a little sweeter. No idea where the spice complaint came from though, did you add garlic? You may not have cooked it enough.

Ok, just to clarify, I simmered the sauce for 3.5 to 4 hours, used half fresh and half canned tomato, and did use garlic which I forgot to mention. I know a lot of people do use sugar but I didn’t because it wasn’t particularly acidic by the time it was reduced.
