I've consumed a shit ton of sugary foods throughout my life. Like, eating an entire tub of ice cream in a day is not unheard of for me. Tons of candies and chocolate, etc. I only found out in my 20's that this can lead to diabetes.

Get an A1c hemoglobin test. If you have an elevated average blood glucose, you're prediabetic. If you're prediabetic switch to a low carbohydrate or ketogenic diet. Eh, if you're gonna eat a salad i wouldn't even bother eating one with lettuce or leaves, that shit will leave u hungry and you'll just eat more. Your gonna wanna eat a heavy salad, volume eat. Personally i like eating chopped up cucumbers, tomatos, and chicken with ranch. Its a comfort food for me and super filling. Just buy low calorie dressing and follow the portion size to be aware of calories.

Eat more eggs, 1 egg is 80 cals so u can have 3 in the morning if u really wanted too and that'll only be 240cals. You can add sum potato or a cup of fruit. You'll be very full after that.

Focus on eating lots of protein and healthy fats from whole foods like fish, avocado, peanuts ect. Your carbs should come from mainly vegetables and a bit of fruit. Add grains for fiber like rice and oats, fiber will also help keep u full.

Most important part is keeping yourself full while eating whole foods, 500cals a meal is a lot to mess around with so you'll do just fine, good luck.

I'm a diabetus. You need to check your glucose before and after eating. I prefer metformin than the injections.
Managing it is about controlling insulin, to teach your body to regulate itself. Cut off carbs, especially bread. A little bit of rice, potato or corn tortilla is fine but anything flour is garbage, and by little I mean VERY little, just as helper to not drive you insane. For sweets, just fresh fruit, very little. Cut out most dairy, a little butter and cheese is fine, but most of your food should be meat and fat and a bit of vegetables. Again be careful with vegetables because they spike insulin.
The other part is losing fat. You're going to have to count calories and manage what you eat better. Learn to be satiated with less, fast and you will figure out when and why you're eating.
Make it a routine, as something to look forward to. Personally I prefer one or two meals a day. I was in the hospital for COVID for almost a month and they were feeding me 3 times a day with a shitload of more carbs than I'm used to. I didn't gain weight in fact I lost a bit, but they were injecting me about 9 times a day with insulin and giving me metformin.
Fast for a week if you can, so you can at least experience that you don't really need as much food as you think, and find the reasons why you're over eating. Make sure to hydrate with electrolyte water (salt, potassium) minimum.
Don't get diabetes it's a fucking pain and expensive not worth the tubs of ice cream or whatever it is you're eating.

Your body naturally releases insulin when consuming carbs. It's not a bad thing as it's your body's way of maintaining the right blood sugar levels. It becomes a problem when your body is constantly releasing insulin though, eventually it just can't deal with that anymore. That's why fasting or going down to one/two meals a day with no snacking is good for prediabetics, it helps restore insulin sensitivity and will usually result in some weight loss too. Exercise can also help increase insulin sensitivity.

You just don't want to be eating multiple times a day and constantly snacking and especially drinking soda or stuff like that. It just causes your body to have to produce too much insulin all the time.

That's not some speculative claim. The standard consensus is that neither sugar nor macronutrient ratio causes type 2 diabetes. The one factor that is well supported as predictive of type 2 diabetes is being overweight. Sugar only "causes" diabetes in the sense that it has calories and eating too many calories will make you overweight. Look at pretty much any mainstream / official source for information on type 2 diabetes and they'll point that out. Sugar matter a lot for people who already have diabetes. That's what the disease entails: impaired ability to process sugar. But that impairment is the result, not the cause. A normal healthy person doesn't become diabetic just because their diet contains sugar. They become diabetic more than 90% of the time because they ate to excess and were overweight. Like I posted earlier, you can see for yourself it's the standard accepted account for how type 2 diabetes works:
