Creamy Chicken and Rice Soup

Soup Contents
>~1 tbs cooking oil
>~500g cut up chicken (bite sized)
>1 whole onion (diced)
>2-4 cloves of garlic (diced)
>~185g uncooked rice (cook it prior, then add to soup later)
>veggies of your choice (celery, carrot, bell peppers, etc)
>~500g of diced mushroom (can be canned)

Broth Contents
>1 litre of chicken stock
>1/2 litre of milk
>1/2 litre of beef stock (optional, can be replaced with water)

Seasoning Contents
>1 tbs salt
>1 tbs pepper
>1 tbs garlic powder
>1 tbs onion powder
>1 tbs basil
>1/2 tbs thyme

Cooking Instructions
>Pre cook the rice
>If chicken isn't cooked, season w/ salt & pepper then sear all sides, then remove from pot
>If chicken is cooked, skip this step

>Add onion & garlic to same pot
>Cook until onions are slightly soft

>Add mushrooms & cook for ~2 min
>Add rest of vegetables & sweat for a couple minutes
>Add chicken back into pot

>Add 1/2 litre of beef stock & let simmer until sauce is reduced
>Add seasonings and stir

>Add 1 litre of chicken stock
>Wait until it begins to simmer again then slowly stir in 1/2 litre of milk.
>Taste & add seasonings accordingly

>Turn heat on low & simmer for 10-20 min
>Add rice
>Let simmer for another 10 min & stir occasionally
>Add water if soup is too thick

>chicken thigh
>simmer the chicken until it's cooked and you can easily remove the bones
>chop the meat
>drain most of the water
>get the creamed corn & kernals in a saucepan and get it to a simmer
>add a couple nobs of butter
>add the chicken meat back into the pot
>right before serving dump some instant potato flakes into the soup and stir them in to thicken it up
>serve with crusty buttered bread

>chopped onions
>cook on low heat in stockpot until onions carmelize
>add vegetables, easiest is celery and carrots and little fresh garlic
>after vegetable soften add water, turn to simmer
>add meat of your choice
>simmer half an hour
>turn down to low
>serve warm

Bonus points if you had grated cheese or little pieces of bread of throw on top after serving

Spices don’t really matter, just make sure to add some salt at the very least. If you don’t know what you’re doing, just a shake of very mild spices of paprika and basil, etc. don’t fuck this up by adding a shitton of cayenne or mustard or something.

Good luck. I forgot for my basic chicken/creamed corn soup that you can also add in a half cup of cream (say 150ml for a two person serving) right before serving to lighten it up, pour in, stir for a few minutes before serving to get it all up to serving temp.
