Once I grilled them with teriyaki on skewers. They weren't so tender, so maybe a marinade would be good too.

Yakitori.
1part beer or sake
1 part soy
1 part japanese soup base
maybe add a tiny amount of sugar depending on how the beer/sake tastes.
boil down into a sauce that is a little more runny then blood. pour this sauce into a long cup/jug.
skewer chicken hearts. sprinkle with white pepper and sake. fry chicken heart skewers for a minute then dip the skewer into the jug filled with sauce. then fry again untill medium or fully cooked add a little more sauce to skewers before finishing.

keep the sauce, even though semi raw chicken skewers were dipped in. some Japanese restaurants will keep the same sauce for 50 years.

you dont need a grill I used a pan.

I bought a big bag of grated parmesan about a year ago and yesterday when I used some I noticed that one of the handfuls had some mold. The rest of the cheese looks, smells and tastes fine. I have about 1-1.5 cups left.

What are some good recipes that use up parmesan that aren't cheese crisps? Or is parmesan basically just a "topper" cheese?

They make surpisingly good sauce, just throw onion and whatever vegetables you have (i used bell pepper and champion mushrooms) and fry with split chicken hearts. After they're almost done, i season them with salt tarragon, thyme and white pepper and add heavy cream. I almost let it boil and season once more with dijon mustard.
Serve with rice.
