Escargot is a regional dish, and even in that region it's not really very common. They unironically eat lots of baguettes, frozen food, fast food, and just typical stuff like meat/veg/protein. They also love dairy. Not just butter and cheese, but milk and yogurt.

Snails are actually alright. "Eat ze bugs" memes aside, it's not so different from shellfish, and actually better because they're served basically floating in delicious savory garlic butter, with delicious hot crusty bread, and wine or pastis. The texture can be a little chewy, but not more so than octopus or squid, and everyone on the designated Food & Cooking board enjoys those too, yes?

I wish we could get over this artificial animosity between America and the rest of the world. America and France used to be frens, French food is generally awesome, can't we all just get along. I live in an area with a million Chinese, Indian, and Latin American restaurants but the only French restaurant closed during COVID shenanigans. And don't tell me that French cuisine has been entirely blended into generic American haute cuisine so it doesn't matter because we know that's not true. I just want a place where I can wear my beret and scarf and striped shirt, and openly shit on the sidewalk (à la mode de Paris) without getting heckled or arrested.

I've lived in the Sud Ouest for the last 15 years and not even the old 90 year old lady I buy my newspaper from remembers the last time she ate ortolan, it was always a very niche dish, if only for the price if you weren't hunting your own. This article says the Nazis tried to put a stop to the consumption of ortolans during their occupation of France, 1940-1944. The Nazis thought it was too cruel. Just as soon as the Americans and British freed France in 1944 one of the first things the French did was to resume eating ortolans.
