Gordon Hacksey makes these "Chinese-style tortellini" to try and impress a head chef at a London dim sum restaurant but it's like something a first-month culinary student would pull together It makes me genuinely mad that a "professional" would make something so retarded and convince himself it's good

I have seen every episode of Hells Kitchen. I am convinced he tells guest judges to make it close in the finales. There is no way 9s and 8s alternate naturally like they do so often with his finale guest judges. Especially when they are sometimes just a general manager or someone with no kitchen experience. You make better food if you grew up with it/it was a part of your culture. You have a connection that no outsider will ever have to it. Would you really prefer a French meal made by a Chinese guy who learned to cook in Paris five years ago or one made by a Frenchman who has spent decades immersed in the culture? Why do you think Ramsay is so passionate about a chip butty/beans on toast/beef Wellington? It's more than just food to him, it's his history and his culture. His best food is also always his modern British stuff, his Asian/pizza places are mediocre.

I'm from Italy, but my uncle married a Nihonjin woman from (... I wanna say Kobe?) who, in the 80s, had few options for actual Japanese ingredients so had to create Japitalian fusion (since she didn't know how to cook Italian food and my uncle only knew how to cook fish) and it was good stuff.
Most other naturally occuring fusion cuisines I've had have also been good, such as Peranakan cooking, Burgher cooking, American Chinese cooking, AngloIndian cooking, ItaloEcuadorian cooking, TexMex/American Southwestern cooking and so on. The only one I can say I've disliked is ItaloAmerican/ItaloAustralian cooking, but that's likely due to my own cultural chauvinism.
If you've ever had and liked masala chai, congratulations; you've enjoyed something that was the product of naturally occuring fusion cuisine.
Fusion can be good, but not when made through a hamfisted attempt to shoehorn things together that simply don't work.
