What are some culinary oddities local to you that most people wouldn’t know about?

Near me, it’s Regina style pizza.
A thick crust pizza covered with a sweeter tomato sauce, then layered with various meats and veggies, topped with cheese, cooked and then cut into squares. I quite like it!

It's cheese made from quark. It smells somewhat off to non-knowers of said delicacy yet not surströmming tier. The cheese that's handmade - Handkäs - is marinated in Hessian apple wine, apple vinegar, some oil, pepper, salt, onion and caraway. After a couple of hours - if you are debil - or at least 12-24 hours you can serve it. It's eaten on dark bread with butter.

In eastern Iowa we have taco pizza. Instead of a tomato sauce it's more like a bean paste and then topped with seasoned ground beef, lettuce, tomato, taco sauce, and a special kind of chip made specifically to put on the pizza. I used to get it on my birthday every year growing up.

it's basically browned ground beef mixed with cream of mushroom soup, corn (optional), green beans (optional), put into a casserole dish with a layer of cheese and tater tots on top. basically it's something you could make when you live somewhere cold and remote where it's winter most of the year, and the only things you can get fresh are beef and dairy. a cuisine based around canned or frozen goods.

it's better than it looks if the tater tots and beef are good. I prefer it without the corn and green beans, though I like vegetables, because the canned veggie flavor permeates the dish. natives prefer it that way apparently.

I think the word "hotdish" is just a midwestern thing, and only Minnesota and North Dakota afaik. but hotdish/casserole culture definitely seems to be a bigger deal here than anywhere else I've lived. it seems like the culture around it goes back to WWI and depression era times of scarcity, when canned foods were novel and popular, and of course because it's cheap and easy to make for potlucks and gatherings (e.g. for church). I'm not from this region originally but it's all interesting to me, and a good casserole is pretty nice. certain other regions in the US I've lived in don't seem to have such distinct regional cuisines.

again, a sicilian thing. moffoletta refers to different kinds of bread but mostly this round sort of focaccia greasy with olive oil, a delicacy.
picrelated is a muffoletta with fennel seed made during the day of st. Martino.
In northern Italy they have something vaguely similar but shittier and they call it 'pane arabo' literally arab bread. Sicilian bread and pizza are above average for italian standards and also they heavily influenced american styles of pizza both in New York and in Detroit and probably all along New Jersey.
also it make sense that it is a New Orleans dish since Sicilians went there in late XIX century used as proto-slaves, you even had Sicilian people lynched there, there is a nice book called Lynching to Belong talking about how italians gained whiteness in the US and New Orleans had a role in that.
