if i cook thin chicken breast strips wrapped in bacon, is it safe to assume the bacon has finished cooking when the check breast reaches 180 internal temperature? i know its apparently rare in the US outside self butchered meat it but still drives my anxiety through the roof

Depending on the processing of the bacon you can eat it raw without health consequences. Properly cured and smoked pork has already been cooked to an appropriate temperature. If you are really worried you can sous vide it to 72C to cook it again and it will remain pliable. In a commercial kitchen I worked in we would wrap the bacon around the raw chicken and cover in cling wrap. Then we would poach it. Allow it to cool and heavy sear the outside to get the correct texture for the bacon. A lot of grocery store bacon here in Australia has not been smoked or cured correctly using faster chemical agents for flavoring so cooking to 75C is recommended but it isn't necessary and really isn't ideal unless you like your food dry.

Bacon is cured, so it will remain pink after cooking. Yes if the chicken is cooked the bacon will be cooked.

The only way you could fuck this up would be if you cooked the whole thing from the top only, then the bottom might be raw both in the bacon and the chicken department.

Frankly because bacon is salted and cured you'd have a really hard time poisoning yourself with it

Unless you're using some crazy thick bacon -- which I assume you're not since it's a bacon wrapped dish -- the bacon will be done before the chicken breast is because it is significantly thinner and is in direct contact with the heat.
