I love guajillos.
I made up a sauce I call 1-2-3 Red. 3 guajillos, 2 garlic cloves, one roma. I eat it with eggs and cilantro kind of like shakshouka.

If you were going to use fresh chilis, then yes, absolutely. I used dried chilis though, so they're already packed with flavor, I just toasted them in a dry pan for a few minutes
