I'm glad that my Polish-German grandmother raised me on: tripe soup, liver with onions and apples, kiszka ziemniaczana(potatoes in pig bowels), aspic(with pig/chicken meat in it), blood sausages and many other foods discarded by Americans and Zoomers.

Those are all underrated dishes that you miss but almost never have enough time to make anymore.

Not at all imo. You can taste it in some parts, but it's get overshadowed by the sweet and salty taste.

I made a simple tripe soup today

Clean and wash tripe
rehydrate 2 morita and 1 california peppers, then blend smooth with hot water
chop onion and garlic
in a pan or pot boil some water and basically toss in everything, salt and pepper to taste
boil for 30 minutes or until tripe is tender enough but still has some chew to it

I liked it, I get my tripe from a Mexican grocer because all the regular stores don't carry organ meats. Also picked up some liver to eat with my eggs and some beef neck bones to make some stock, it's pretty awesome.

Ah yes menduo. Honeycomb only tripe but get rid of the layer of fat left after its cooked. A little leaner tastes way better. Hominy, pan, lemon, oregano, chile, and coffe.
