For me, it's Helen Rennie. Brian Lagerstrom is pretty decent too and you can tell he genuinely enjoys cooking. Weissmans recipes are unironically god tier though. Yeah it takes a while, but as a sunday treat for me and my gf they fucking hit hard. Can't imagine being able to make fresh bread daily working a full time job, of course, but it is perfectly doable as an occasional thing.
His cookbook has a lot of basic instructions for stuff as well. Most of the recipes are things that I would never make, but around a third are really useful as well to work off of. If it's too complicated switch something out for store bought and you can have a quick weeknight recipe.

I like Brian's video because he:
1. Gives a specific cause-and-effect explanation and justification for each step in his recipes for what they do to the final dish
2. Importantly he explains or even demonstrates what happens when you DON'T follow the steps from recipe development (this eliminates the temptation to think of many of them as "optional")
3. Does not edit out large fuckups.
4. Explains what's wrong with traditional or popular methods when he deviates majorly from them.
I particularly like #4 which you can see in his videos on cooking dry pasta in the sauce in the oven and making a tomato soup again in the oven from raw loosely chopped veggies.

But that's why "But Cheaper" exists to show viewers that making homemade versions of restaurant menu items are both economical and better tasting with proper care and technique. The issue is Weissman flexes too much when he substitute homemade vs. storebought core staples like making his own breads/pasta or grinding his own sausage/meat. Certainly makes for more entertainment and views but can be self-defeating for the purpose of not intimidating non-cooks even when he assures them store-bought is fine. I can't deny his culinary sensibilities seem like they are time-warped from another era, but that's part of the appeal for me on top of excellent execution. You don't see too many YT cooks busting out the Chicken Fricassée or Lobster Thermidor for instance. I would also say part of it could be down to the lighting of his kitchen and the recording equipment they use. Personally I think it looks delicious in the pan. With respect to plating, could he have diced the carrots into multi-colored coins and fanned them out nicely? Could he have rested the fish on top of a bed of the couscous instead of having it on the side? Sure. He takes his time to pretty up the dish for the thumbnail, but as far as serving/tasting for the video I think he tries to strike a balance between showing a long-by-youtube-standards continuous cooking program without many jumpcuts and not boring the audience by fussing too much over the finer details at the end. Also certain recipes like this one in particular are meant to be workhorse weeknight meals compared to some of his other more special occasion videos like his Osso Buco or Bûche de Noël.

Brian Lagerstrom because his videos are contained recipes without getting too fluffy or up his own ass and he tells you the why which lets you apply things to your own cooking in other dishes. A bonus is he gives you small chef hacks like using 2 deli lids to cut a bunch of cherry tomatoes at once.
I like chlebowski for certain debunking or nerd shit like his san marzano tomato vid but he kinda falls on the 'just some guy' side like ragusia and his pacing and organization feels a bit off.
If Kenji started using Brian's production style he'd be the goat.
