Never been to /ck/ before, but I had a discussion with some friends not too long ago and need some extra opinions.

Thoughts on Spanish cuisine? Is their food tasty? Too greasy/fat?

I'm incredibly biased because I'm Spanish. But I'd say yes.
If you want to taste Spanish cuisine you shouldn't limit yourself to paellas and jamón. Try stuff from all over the place; Fabada, Gachas, Salmorejo, Garbanzada, Pulpo a la Gallega and much more.
Also try the cheese and sausages like Butifarra and Morcilla. Dried meat too: Chorizo, Salchichón, etc.

I like Spanish food but I think it has less of a clear personality in people's minds compared to Italian or French stuff, other than jamon and paella. But that's part of why I like it, it's more like good peasant food, nice stews, lots of sausage, simply cooked fish. It's the kind of food you'd actually make at home rather than have in a restaurant because it's not high-concept at all.

When going out I prefer a tapas restaurant rather than a regular spanish one, because if it's a good tapas place you can at least try 5 different things and leave with your curiosity satisfied.

I went to Spain and while I expected to not be able to eat anything I was pleasantly surprised when I got to try some jamón and tapas which were really good. Also being a beaner I was amused when the spanish tortilla was the same shit as huevos en torta

Jamon has a more "meaty" mature funk to it, prosciutto is usually a much "brighter" flavour with a sort of floral taste to it

One isn't necessarily better than the other, they're both fantastic and jamon is well worth a try if you like cured pork

I guess I will never find the chorizo español/mexicano I had in veracruz when I was a child.

Huevo con chorizo used to taste heavenly. Now the best I can find is San Manuel and it just doesn't cut it.

I looked for spanish chorizo at the liquor store and it was hard. Not the same thing

Spanish food looks bad. Its all brown/beige and its almost always just meat, bread and oil. That said, it almost always tastes great. Its not uniform as every region has a particular spin on their cuisine. If recommend traveling around and see which you prefer. If you like seafood, go to the coasts, if you prefer meat, go inland.
Córdoba has great food if you like meat and vegetables. And you must but croquettas, Spanish coquettes
