OP should rename his food cart to "The Itis" and deep fry EVERYTHING in lard. Also, sprinkle some MSG and psyllium husks on the finished product, and only offer seed oil and little packets of salt as condiments.
Advertise it as "good for the soul," and don't mention calories anywhere.
