You have to know which one grow in your area at what time of year in what substrate, which are edible, what they look like at each stage of growth and their possible toxic lookalikes. People say to avoid white gilled mushrooms not because most of them are toxic, but because a few of them are actually deadly. Most "toxic" mushrooms will leave you throwing up or with a tummy ache.
