Gingerbread is for the hovels. You need a Sugar Castle (LEDs not optional). Honestly, though, good gingerbread is hard to do if you want it to be edible for a while. Either coated in icing or that mythically perfect ratio of sugar/hydration to make it last a month while being structurally sound and not solid granite worth only of molten fury chocolate to soften it in the end (honestly, not the worst thing). Avoiding gimmicks is the main thing. Get creative with old school stuff.
