It's around 3lbs. wife will weigh it today to confirm.

smoker is a UBS. wood choices are: Oak, Mesquite, Peach or Mulberry.

looking for temp/time reccomendations, as well as wood type. already seasoned with chilli powder, paprika, rosemary and black pepper.

we got 99% of it, scalding & scraping. the 1% that remains is prettymuch on bits that will become dog treats. aside from that, it will likely singe off anyway. anything that remains after 2-3 hour cook time I can take off by reviving the flame, to singe/sear it for a few seconds.

I like pecan and cherry wood together, cherry wood goes well with any other subtle smoking wood imo though.
Depending on how to put it into the smoker and what temp you want I would expect it to take between 1.5 and 3 hours.

normally, we just shoot them in the head. since this one was so small, and we want to make *some* use of every ounce, we used Nitrogen to kill it.
