So I hit 30 and suddenly, with no reason in particular, I wanted to start grilling. I have absolutely nothing right now so the slate is clean. Is charcoal the way to go or propane? Besides mushrooms what are some other non-meats that a grill can make better?

Eggplant, onion, pineapple, or peaches are a few more non-meats for the grill, and you can do foil wrapped taters.

For deciding between propane or charcoal, there's several things to consider.

Propane grills are best suited for grilling and not smoking. They heat up quickly and are perfect for things that don't need a long cook time. Burgers, hot dogs, steaks, kebobs, chicken legs and breasts, pork chops, most fish. Propane is heavier than air so the gas falls while the heat rises.

Charcoal is best suited for slow cooked and smoked meals. It take a while to get charcoal hot enough to start cooking but it can keep its temperature longer. Charcoal also requires some maintaining while cooking to keep the heat up. I find charcoal best for the things that need to cook for over a hour. Pork shoulder, pork belly, brisket, whole chicken.

Both grill types can be used for grilling and smoking, its just a matter of what they are best suited for.

Neither, pick up a decent pellet smoker, as long as it's not a vertical one, you can easily grill on it, mine even comes with a door you can open to expose the flames directly to the meat.

Old fuck here. Get a webber kettle grill. Its design has been the same for over 70 years and there is a reason for that. It's the most versatile grill around. You can grill direct/ indirect and smoke pretty dam easily. Charcoal briquettes and wood add flavor op! Also the pocess of cracking a cold beer, lighting the coals and getting them just right while you drink is a relaxing experience.

If you get one you will want the other. both have merits, most people who get into grilling end up owning both. They let you make different types of food, cooking outside is fun no matter what you're making, bbq nuts arent much different from pizza oven nuts. if you want a great starter bbq that lets you do a lot, get a Weber kettle. Bonus, in most of the northern US we're entering Free Grill Season where all the weak people who failed to cover their grills over the winter and quail before the thought of repairing a little rust themselves put nice bbqs out on the curb. If you keep your eyes out you can almost certainly pick up a good kettle and a good propane bbq that need at most some heat resistant spray paint, an hour's worth of elbow grease and YouTube videos, and $100 in parts. I've never purchased a grill in my life and I've owned a bunch of top quality $1k+ bbqs this way. Sometimes they even leave them out back on the deck.

Before you do anything, get yourself a bag of charcoal, pop down to the local park with some meat, use the grill on a stand they got (after cleaning it up) and grill some burgers on the charcoal. If you don't like it, go propane. If you love it, get a charcoal offset. The offset will let you grill and smoke.

Grills can do pizza (via stone), corn, veggies on skewers, and anything you want to slap in cast iron.

Mine(and others) have a grate that you can open to expose the flame directly to the meat, it absolutely works, and it absolutely gets hot enough to grill well.

Pick up a cheap short stack / egg smoker if you want an introduction to smoking with charcoal. Or go balls deep if you've had any friends with a smoker and you know you want to smoke food.

For an outdoor grill, propane is super convenient. I can throw burgers on the grill whenever I feel like it with merely a few seconds of prep effort and a few minutes of waiting to pre-heat. Same amount of effort and efficiency in the rain and the snow as well. Temperature is also very easy to control.
Charcoal and wood can give you better flavor. But it takes more effort and has a longer start-up time. It's more susceptible to weather conditions. Temperature control requires more skill. But you can typically hit higher temperatures more easily. Which can be very important for searing.

I used to be a propane coper because propane is simply easier. But when I tried charcoal, you can't go back. It's easy to fuck up which is why a lot of people are put off by it, they use too much lighter fluid, don't let the coals fully set before putting on the meat, and other things that add undesirable flavors. If you ignite the coals without soaking them in fuel and let them all reach a whitened red-hot state, then add wood chips, it's based.
I also use wood by burning thinner logs and thick sticks until they are coals.

Propane is not bad but it's 100% sacrificing flavor for convenience.
