Most are as you described but a few are actually good. Chef John for example never shows himself - camera is always on the food prep and cooking so you can see the technique. He does a voiceover made in post while this is happening and the only "entertainer" vibes is a few boomer jokes but they're good natured. Very approachable for new cooks and people just looking for ideas.

Jean Pierre is like many of the other YT chefs who were Pros in a previous life (Lagerstrom, Weissman) that practice the fundamentals of mise en place, cleaning as you go, paying attention to temperature, etc. but after he retired from his restaurant he operated a private cooking school for many years before starting his channel so he has the presentation and affect of a teacher in how he drills in concepts via humorous repetition and explains them in detail.

He's sort of like Chef John in that way who was former-CIA instructor as well if I recall.

Guy has good recipes but his whole "hey everyone here's my whole family, we're just a typical suburban family" thing is weird, like I wouldn't showcase my wife/kids over the internet if I could help it. his recipes are relatively simple and easy to do, probably this is one of the main channels I would check if I wanted to make an Italian recipe

He's good I guess people are complaining about him being drunk, I don't really care I don't notice it to be honest, if he drinks during the shoot it's probably just a glass of wine or two or three, no big deal doesn't seem to have much of an impact on him. His videos are longer and less edited so there's a lot to sit through in terms of him just babbling. The recipes also call for a lot of uncommon ingredients which are difficult to source a lot of the time such as the green peppercorns, juniper berries idk. Still his recipes are top notch at least the ones I've tried, they require a little more effort than the more standard fare but he shows a true dedication to the craft and is clearly more interested in passing down everything he knows about cooking rather than making money, like Jacques Pepin

I really like this bong guy. He does absurd "fusion" recipes, mostly Indian food though. He's 100% the most creative person making cooking youtube vids nowadays and it's genuinely fucking bonkers how much effort he puts into 1 video just from cooking time alone. It's like 4-5 recipes in 1.

Another good channel is Sorted food. Been watching them for at least 10 years. It's more of a food entertainment channel but it's good fun.

For people that are learning to cook, Fagusea, Chef John and Lagerstrom are all you really need. Lagerstrom makes the best recipes IMO.
