It's pure fat with no solids so it won't burn as easily. Brings a distinctly duck flavor, so while it's great for savory dishes it's terrible for sweets. It comes from ducks and not milk.

I've never cooked with rendered duck fat but whenever i get a whole duck or duck breast/legs I save the trimmed fat and freeze it to use for pan frying things. I put all the fat hunks in a freezer bag and will use an old shitty steak knife to carve off little pieces. Usually 2 or 3 cranberry sized pieces on low heat until rendered will grease a pan really well, it has a nice peppery kind of taste to it that is nice for frying mushrooms and greenbeans

different uses, duck fat has a higher smoke point and tastes like schmaltz but its duck not schmaltz obv
i havent used it much but so far its great for frying potatoes and fish

The thing with duck fat is that it smells REALLY GOOD cold but when it's heated it's pretty much like lard except 20x as expensive. It's also expensive for no reason, you can just collect fat from meat (any animal) and use that.

Butter is good for cooking too, just clarify it first so it doesn't burn.

Proper extracted fats are more pure than the fat from parures. Also here goose or duck fat cost like the same as butter if you buy them from a poultry butcher although they're pretty niche.

delicious, great for high heat cooking, especially roasting, most jarred products like in the OP pic are expensive compared to lard, but it does have a nice flavour, and i highly recommend making sarladaise potatoes once or twice, its a genuinely wonderful preparation that highlights just how good duck fat and decent potatoes can be
