Round Five (July 15-22nd)

-You MUST timestamp your entry photo. No timestamp, no vote. You only have to timestamp your completed dish photo, not multiple photos if you’re posting a set.
-The more photos you post, the better! We want to see your cooking. Detailing the cooking process/posting a recipe is encouraged (but not mandatory).

Just so you know. there is a grilling ban in several counties across the united states because of drought conditions. The fire department will charge you $500 if you get caught and they make you disassemble your grill.

We got a few emails about certain difficulties concerning this challenge, so we're going to extend it for another week.

AND for the contestants who emailed and said they didn't see the point in buying a new bag of charcoal just to make an entry dish, here is an added incentive. I will paypal (or send an Amazon giftcard) $10 to whoever has the highest score in this round. Unless you live in some crazy island where charcoal costs $10 a nugget, it should cover the cost of a small bag.

Recipe:

Take the loin and trin it. Put it in a bag with 2 tablespoons of sweet chili sauce, ½ dl. teriyaki sauce and some pepper - marinate it for an hour. Take meat and quickly fry it on the hot side of the grill on all 4 sides, while adding the previously used marinade. Then place the loin on the "passive" side of the grill for 20-25 minutes and turn it a couple of times - again while coating with the marinade. Just before you take it off the grill, give the loin another coating and let it rest for about 15 min.

For the pesto you take about 25g. of pine nuts, 10g. of sun dried tomatoes and a pot of fresh basil and chop them very finely. Crush 2 cloves of garlic, add a tablespoon of the sweet chili sauce, 60g of parmasan cheese and 1 dl. of olive oil - add salt and pepper if needed. Mix it all together and add it to the pasta (pennepasta is best for this dish in my opinion).

It's my 30th birthday, and by damned I was going to grill, so here you go!

I took beef shanks, separated the marrow bone first, cut a filet, and a chop. Dusted with Salt, onion powder, chili powder, garlic powder, black pepper, and some grapefruit zest on both sides, grilled over mesquite fire.

Blanched asparagus and green beans for 5 minutes in salty water, and made a balsamic/butter/soy sauce.

Made guacamole from scratch. Very simple, little grapefruit juice, 5 avocados, one tomato, one onion, five large garlic cloves, some salt.

Limited Edition Summer Lime Mission Tortilla Chips.

Fat sake bottle.

I'll post up a vertical in a bit, after I enjoy my birthday meal.

Almost didn't manage to do anything for this round, bu my grand-mother requested that her birthday dinner be a nice grilling event, bless her soul.

So the timestamp is on the fist picture instead of the last and there's a noticeable jump in the pictures as I did the second half of the recipe at a different location.

Also, the chicken should be a whole chicken, broken in 8 parts with the skin on. However, I didn't not have the time to go to the butcher and get such a bird, so chicken breast where used instead.

I created the marinade for this dish a while ago, and it is one of my favorites. I have shared it on /ck/ the past and hopefully someone has tried it and will vouch that it is,indeed, fantastic. I modified it slightly for this contest entry and I am very pleased with the results. It provides a bright and tangy flavor with a slight spicy kick and produces plump and juicy finger licking wings. I served this with a simple grilled potato and lots of cold beer. I used a smoker style grill with charcoal and cooked the chicken over indirect heat. The vertical that follows will explain the process. Enjoy!

I had a crappy indoor electric grill and a makeshift stovetop grill, so you gotta bear with me here. There's a fire (and outdoor watering) ban where I am right now because of the drought. Vertical tomorrow.

There are some AWESOME entries this round. Great job.

But, here is grilled tofu, marinated in a blend of peanut oil, sesame oil, soy sauce, lemon juice, rice wine vinegar, cumin, garlic powder, pepper, and paprika, with grilled eggplant, mushrooms, onions, bell peppers, and tomatoes, served with spinach and grilled bread and garlic/red pepper hummus.

for those of you wondering, in the middle is a homemade hamburger with little grilled onions inside and it's made of 70% meat and the rest is Okara (soy pulp). It was then grilled in a tomato sauce. On the right is a cold potato/carrot/pepper salad with a white sesame sauce on it. On the left is a delicious tofu/potato/kabotcha (sweet Japanese squash) mixture seasoned with a Chinese hot sauce and a regular American garlic.onion and salt seasoning

The shrimp and scallops were tossed in chili-infused oil topped with black pepper and grilled, salted on the plate. The cauliflower puree was part roasted on the grill and part steamed in fish stock, blended with half and half, olive oil, white pepper and salt. The seafood is on top of edamame, crimini mushrooms, and chopped almonds sauteed with garlic and shallots in bacon fat. The sauce on the right is blanched and shocked parsley, stems discarded, pureed with fish stock and salt, then pushed through a sieve; I added it to a pan and reduced just by a tad over low heat. The sauce on the left is red pepper charred on the grill, skin removed/seeded, added to a blender with some red wine, beet juice (grated beet and hand squeezed) olive oil, salt and shallots. The scallops are dusted with bacon; the bacon is minced, fried until crispy then ground with a mortar and pestle.

To be more clear and dispel further doubt, you have to tell me how they weren't grilled despite owning a grill (let alone one that has chilis from the chili oil still stuck to the grill where the shrimp were) knowing that based on test runs with shrimp and scallops I couldn't get nice grill marks; had I chosen to sautee them I could have made them look *much* nicer. Initially I thought I didn't preheat the grill long enough which is why they didnt' have grill searing marks. Tonight I preheated the grill for 20min and had similar results. Instead of waiting for grill marks to develop, I took them off when they were cooked properly instead of ruining the food. Further, how/why are the shrimp tails charred? inb4 bic lighter

hey, man. if you want to get really well-defined grill marks lay a piece of foil, shiny side down directly on the grill. cover and allow to heat for 20 minutes. also it'll save you elbow grease when scrubbing your grill, it gets the metal hot enough to incinerate most stuck on grease.

There's also half of a grilled Portobello mushroom, seasoned with some salt, pepper and garlic-infused olive oil underneath both of the fish.

I wanted to do a grilled asparagus with a larger snapper fillet but the fishmonger I go to is fucking retarded and has no clue what she's doing and butchered the fish.

The carcass went into to making a fish soup but since that's not part of the competition, I didn't take a photo of that. As usual, there will be a photo collage of the cooking process later. Just wanted to throw this online before I go to bed.
